Zucchini Muffins - cooking recipe

Ingredients
    1 1/2 c. grated zucchini
    1/2 c. plus 2 Tbsp. oil
    3/4 c. dark brown sugar
    2 eggs
    1/2 tsp. vanilla
    1 1/2 c. flour
    1/2 tsp. baking soda
    3/4 tsp. baking powder
    1/4 tsp. salt
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 c. chopped nuts
Preparation
    Combine first five ingredients in a large bowl.
    In another bowl, combine remaining ingredients.
    Add to first bowl and stir only until blended.
    Spoon into well-greased or paper lined muffin pan.
    Bake at 375\u00b0 for 20 minutes or until golden brown.
    Cool for one minute and remove from pan.
