Ingredients

2 c. unsifted all-purpose flour
1 tsp. salt
4 Tbsp. unsalted butter, cut up
1 c. (4 oz.) shredded sharp Cheddar cheese
3/4 c. milk
4 tsp. baking powder
1/2 tsp. cayenne pepper
1 bunch chives, snipped (1/3 c.)
Preparation

Make biscuits.
Preheat oven to 425\u00b0.
Grease large baking sheet.
In large bowl mix flour, baking powder, salt and cayenne. Add butter.
With pastry blender or two knives used scissors fashion, cut in butter until mixture resembles coarse meal.
Add cheese and chives; mix.
Stir in enough milk to form soft dough. Turn out onto lightly floured surface; knead 2 to 3 times.
Pat to 1/2-inch thickness.
With 1 1/2-inch round floured biscuit cutter, cut out biscuits.
Reroll scraps and cut.
Place on baking sheet. Bake 12 minutes and cool.
While biscuits bake, make jam.
