Christmas Pecan Cake - cooking recipe

Ingredients
    1 qt. pecans
    1 1/2 oz. lemon extract
    4 c. all-purpose flour
    3 c. sugar
    1 tsp. baking powder
    6 eggs
    1 lb. butter
    1/2 lb. cordial cherries (red and green)
    1/2 lb. cordial pineapple
    1 lb. white raisins
Preparation
    Soak pecans overnight in lemon extract.
    Preheat oven to 300\u00b0. Grease and flour tube cake pan.
    Cream butter and sugar.
    Add eggs and mix well.
    Add dry ingredients, mixing well.
    Add fruit and nuts and stir.
    Spoon into pan, slightly flattening top.
    Bake 2 1/2 hours at 300\u00b0.
    Delicious, much better than fruit cake.
