Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 1/2 c. cracker crumbs
    1 1/2 c. milk
    1 tsp. salt
    1 stick margarine, melted
    1 1/2 c. grated sharp cheese
    4 eggs
    1/2 tsp. pepper
Preparation
    Cook eggplant until tender; drain.
    Add other ingredients, reserving 1/2 cup cheese and 1/2 cup crumbs and a small amount of butter for top.
    Bake in a 350\u00b0 oven for 25 to 30 minutes.
