Blueberry Vinegar - cooking recipe

Ingredients
    3 c. fresh blueberries
    4 Tbsp. sugar or honey
    4 c. red or white wine vinegar
Preparation
    Combine all ingredients in a saucepan; simmer 10 minutes. Place in a large screw-top jar; store for 3 weeks away from direct sunlight.
    Strain mixture to separate vinegar from berries, pressing berries with a spoon to get all the juice out.
    Strain once more through a coffee filter.
    Pour into a clean, dry decorative bottle.
    We do not recommend adding fresh berries to the finished product.
    Rapid deterioration of the fruit can cause cloudiness and sediment to form.
    Use within 3 months.
