Louise'S Scrumptious Peanut Brittle - cooking recipe
Ingredients

2 c. sugar
1 c. light corn syrup
1/2 c. water
12 oz. fresh raw Spanish peanuts
1/8 tsp. salt
1 tsp. baking soda
1 tsp. vanilla extract
1 Tbsp. butter
Preparation

Combine sugar, corn syrup and water in a large, heavy frying pan.
Place over medium heat and stir until sugar dissolves. Cover and cook for 3 minutes.
Remove cover and cook to soft ball stage (234\u00b0).
Add peanuts.
Stirring frequently, cook until brittle reaches hard crack or brittle stage (300\u00b0).
Remove from heat.
Add remaining ingredients.
Baking soda will make mixture foamy.
Stir until blended but mixture must still be foamy. Spread on a well-buttered, 14 1/2 x 17-inch cookie sheet.
