Vegetable Nachos With Cilantro Cream - cooking recipe
Ingredients

1/2 c. sour cream
2 Tbsp. fresh parsley or cilantro
1 small zucchini, quartered or thinly sliced
1/2 c. shredded carrots
1/3 c. sliced green onions
1 1/2 tsp. ground cumin
4 tsp. cooking oil
1 (15 oz.) can pinto beans, drained and rinsed
4 c. tortilla chips
1 (4 oz.) can jalapenos
4 oz. shredded Cheddar cheese (1 c.)
1/2 c. seeded and chopped tomato
salsa (optional)
Preparation

For Creamed Cilantro:
Stir together sour cream and cilantro or parsley.
Cover and set aside.
