Garlic And Parsley Potatoes - cooking recipe
Ingredients

3 lb. medium red potatoes, sliced (unpeeled)
1/4 c. vegetable oil
2 Tbsp. minced garlic
1 tsp. salt
1 tsp. pepper
2 Tbsp. chopped parsley, divided
Preparation

Combine first 5 ingredients in a large bowl; toss to coat well.
Layer half of potato mixture in a lightly greased 12 x 8 x 2-inch baking dish.
Sprinkle half of parsley over potatoes. Layer remaining potato mixture.
Cover and bake at 350\u00b0 for 50 minutes or until tender.
Uncover and sprinkle remaining parsley over potatoes.
Yield:
8 servings.
