Bertha'S Ripe Tomato Relish - cooking recipe

Ingredients
    10 lb. ripe tomatoes, chopped
    6 large onions, chopped
    6 green bell peppers, chopped
    6 red bell peppers, chopped
    1 stalk celery, chopped
    3 hot peppers, seeded, deveined, chopped
    1 c. salt
    1 qt. vinegar
    4 c. sugar
    1 Tbsp. cinnamon
    1 Tbsp. mustard seed
    1 Tbsp. celery seed
Preparation
    Chop tomatoes, onions, peppers and celery.
    Pour salt over them and let set for 3 hours.
    Drain for half an hour.
    Then add the vinegar, sugar and spices and bring mixture to a boil.
    Fill clean, sterilized jars at once.
    Pour hot paraffin over filled jars and seal.
