Eggplant Pie - cooking recipe

Ingredients
    2 c. shredded Mozzarella cheese
    1/4 c. chopped green pepper
    1/4 c. chopped onion
    1 c. spaghetti sauce with mushrooms
    1/4 tsp. salt
    3 c. sliced and quartered eggplant
    9-inch unbaked pastry shell
    1/4 c. butter
Preparation
    Saute peppers and onion in butter until tender.
    Blend in spaghetti sauce and salt.
    Bring to a boil and add eggplant.
    Cook partially covered for 10 minutes or until eggplant is almost tender.
    Pour 1/2 the mixture into the pie shell.
    Top with 1/2 the cheese.
    Add remaining mixture and top with remaining cheese. Bake at 400\u00b0 for 30 minutes.
    Let stand 15 minutes before serving.
