Scrambled Eggs With Peppers And Zucchini - cooking recipe
Ingredients

2 Tbsp. olive oil
1/2 medium sweet red pepper, seeded, deveined and finely chopped
1/2 medium green pepper
1 small zucchini, chopped
1 clove garlic, minced
6 large eggs
2 Tbsp. marjoram or oregano
salt and pepper to taste
1 onion, sliced
Preparation

Heat oil in a heavy skillet.
Add peppers, zucchini, garlic and marjoram or oregano (if using dried herbs).
Saute 4 to 5 minutes until peppers begin to soften.
Pour off any liquid in skillet. Beat eggs with marjoram or oregano (if using fresh herbs) until fluffy.
Pour into skillet.
Swirl eggs around skillet with wooden spoon, cooking over medium heat until eggs are barely set.
Remove from heat and season with salt and pepper.
(Eggs will continue to cook in the pan.)
Serve immediately.
