Mexican Rice - cooking recipe
Ingredients

1 c. rice
1 chopped onion
1 Tbsp. parsley
2 1/2 c. chicken broth
1 tsp. salt
1/4 c. oil
1 garlic clove
1 jalapeno chile, minced
Preparation

Fry rice in hot oil with onion and garlic until lightly browned.
Drain off oil.
Add boiling broth, parsley, chile and salt.
Cover tightly and simmer for 25 minutes without lifting the lid.
Serve with any main dish.
Serves 4.
