Fish Soup(Fiskesuppe) - cooking recipe

Ingredients
    1 lb. fish (fresh or frozen)
    6 c. water
    2 1/2 tsp. salt
    pinch of white pepper
    1 bay leaf
    1 carrot
    1 leek
    1 piece celery, sliced thin
    3 Tbsp. butter
    3 Tbsp. flour
    1 c. milk
    2 egg yolks
    1/4 c. cream
Preparation
    Poach fish in water with spices, then remove fish and in the fish stock, cook carrot, leek and celery until done.
    Make soup with butter and flour; add fish stock and milk.
    Beat egg yolks and cream.
    While beating, pour fish stock over egg yolks; add flaked fish and vegetables and sprinkle with chives before serving. Serves 6 to 8.
