Spanish Rice - cooking recipe

Ingredients
    1 lb. ground beef
    1 medium onion, chopped
    1 to 2 stalks celery, chopped
    1 1/2 c. uncooked rice
    4 c. stewed tomatoes
    1 Tbsp. chili powder
    sliced Velveeta cheese
    salt and pepper to taste
Preparation
    Cook ground beef, onion and celery until beef is browned and onion and celery soft.
    Add rice and tomatoes.
    Cook with lid on at low temperature until rice is cooked (approximately 30 minutes).
    Stir in seasonings.
    You may need to add 1/2 cup water to help rice cook if tomatoes don't have much liquid.
    Just before serving, cover with cheese slices so cheese melts over top.
