Eddy'S Coconut Cream Pie - cooking recipe
Ingredients

1 c. sugar
1/2 tsp. salt
2 1/2 Tbsp. cornstarch
1 Tbsp. flour
3 c. milk
3 eggs, separated
1 1/4 c. shredded coconut
1 Tbsp. butter
2 tsp. pure vanilla
1/2 tsp. cream of tartar
Preparation

Mix together 2/3 cup sugar, salt, cornstarch and flour.
Beat egg yolks in separate bowl, gradually add milk.
Gradually add egg mixture to dry ingredients, beating well.
Cook and stir over boiling water until thick.
Add 1 cup coconut, butter and 1 1/2 teaspoons vanilla.
Cool.
Pour into baked 9-inch pastry shell. Meanwhile, prepare meringue.
