Spicy Carrot Cake - cooking recipe

Ingredients
    1 1/4 c. flour
    1 c. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    2 tsp. cinnamon
    3/4 c. cooking oil
    2 eggs
    2 tsp. vanilla
    1 c. grated carrots
    1 c. chopped nuts
    1/2 c. raisins, if desired
Preparation
    Lightly spoon flour into measuring cup; level off.
    Measure ingredients in order listed into a large bowl, except carrots, nuts and raisins.
    Blend 1 minute at low speed and 2 minutes at high speed.
    Stir carrots, nuts and raisins into batter.
    Pour into greased 9-inch cake pan.
    Bake at 325\u00b0 for 40 to 45 minutes, until toothpick inserted in center comes out clean.
    Sprinkle with powdered sugar or top with whipped cream and drizzle of honey, if desired.
