California Rice Dish - cooking recipe

Ingredients
    1 lb. lean ground beef
    1 large onion, chopped
    2 1/2 c. water
    1 c. Minute rice
    3 beef bouillon cubes, crushed
    1/2 tsp. dry mustard
    1 medium green pepper, chopped
    1 medium tomato, diced
    1 c. shredded Monterey Jack cheese
Preparation
    Brown beef with onion and drain off fat.
    Stir in water, rice, bouillon cubes and dry mustard.
    Bring to a boil.
    Reduce heat, cover and simmer until liquid is absorbed, approximately 25 minutes.
    Stir in green pepper and tomato and sprinkle cheese on top.
    Cover and remove from heat.
    Let stand 2 to 3 minutes until cheese melts.
