Country Peanut Brittle - cooking recipe

Ingredients
    2 c. sugar
    1 c. light corn syrup
    1/2 c. water
    1/4 c. butter or margarine
    2 1/2 c. raw peanuts
    1 1/2 tsp. baking soda, sifted
Preparation

    set aside.
    Butter the sides of\ta
    heavy 3 quart saucepan.
    In the saucepan combine sugar, corn syrup, water and the 1/4 cup butter or margarine. Cook
    over medium-high
    heat
    to boiling, stirring constantly with a wooden spoon to dissolve sugar.
    This should take about 5 minutes.
    Avoid splashing mixture on sides of pan.\tCarefully
    clip
    candy thermometer to side of pan.
    Cook over medium-low
    heat,
    stirring occasionally, until thermometer registers 275\u00b0,
    soft
    crack stage.
    Mixture should boil at a moderate, steady
    rate
    over entire surface.
    Reaching soft crack stage should take 30 to 35 minutes.
