Herbed Leg Of Lamb - cooking recipe
Ingredients

2 tsp. salt
2 cloves garlic, crushed
1/4 c. oil
1 Tbsp. fresh lemon juice
1 tsp. each crushed oregano and thyme
1 tsp. paprika
1/2 tsp. pepper
5 to 6 lb. leg of lamb
Preparation

In a small bowl, mash salt and garlic to a paste.
Stir in oil, lemon juice and seasonings.
Place lamb on rack in a shallow roasting pan.
Rub entire surface with herb mixture.
Roast at 325\u00b0 for 30 to 35 minutes per pound, about 2 1/2 to 3 hours, or until meat thermometer registers 175\u00b0 to 180\u00b0; baste often.
Stand 5 to 10 minutes before carving.
