Southern-Style Black-Eyed Peas - cooking recipe

Ingredients
    1 lb. pkg. dried black-eyed peas, soaked overnight in water to cover
    4 c. water
    2 tsp. salt
    1/4 tsp. pepper
    1 large onion, chopped
    2 stalks celery, chopped (optional)
    1/2 lb. salt pork, sliced or 2 ham hocks or 1 hog jowl
Preparation
    Soak beans in water overnight.
    Drain and place in crock-pot. Add water and remaining ingredients.
    Cover and cook on high for 1 to 2 hours, then turn to low for 8 to 9 hours.
    Serve over fluffy rice.
