Ratatouille - cooking recipe
Ingredients

2 onions, chopped
2 to 3 garlic cloves, minced
1/2 c. olive oil
2 medium eggplant, sliced in strips
4 to 6 zucchini, chopped
4 tomatoes, peeled and chopped
2 green peppers, chopped
2 tsp. salt
1/2 tsp. thyme
freshly ground pepper to taste
2 leaves fresh basil, chopped (optional)
Preparation

In 1/4 cup oil, saute onion and garlic until soft.
Add remaining oil, eggplant and zucchini and cook about 5 minutes, stirring frequently.
Add tomatoes, peppers, salt, thyme, pepper and basil.
Cover and simmer over low heat, about 20 minutes, then uncover and cook until the juices are reduced.
Serve either hot or cold.
Serves 6.
