Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1 1/4 c cracker crumbs
    1 1/4 c Cheddar cheese, shredded
    2 eggs, beaten
    2 T chopped parsley
    2 T chopped green onions
    1/2 tsp black pepper
Preparation
    Pare and cube eggplant and cook in water 5 minutes.
    Drain and mash; add to the other ingredients.
    Mix well and shape into 8 patties.
    Fry in hot oil until golden brown on each side.
