Acadiana Smothered Okra - cooking recipe
Ingredients

1 lb. fresh or frozen okra
1 medium tomato, chopped
1 medium onion, chopped
salt and pepper
1 Tbsp. cooking oil
2 Tbsp. vinegar
Preparation

Make sure there is enough oil to cover the bottom of a medium saucepan.
Heat oil, adding okra sliced without ends.
Add onion, tomato, vinegar, salt and pepper.
Cook about 45 minutes or until okra is no longer slimy.
Stir often to keep from sticking.
