Double Baked Sweet Potatoes - cooking recipe
Ingredients

6 large sweet potatoes, baked, wash good
1/2 c. margarine
6 Tbsp. apple juice
2 Tbsp. packed brown sugar
1/2 tsp. ginger
Cocomallow Topping
Preparation

Cut each potato in half lengthwise.
Scoop out center, leaving shell.
Mash potatoes.
Add margarine, apple juice, sugar and ginger and beat until fluffy.
Spoon into potato shells.
Top with Cocomallow Topping.
Bake at 350\u00b0 for 20 minutes.
