No-Fat Creamy Broccoli Soup - cooking recipe

Ingredients
    1 head broccoli
    1 medium onion
    2 medium potatoes
    1 c. skim milk
    1 Tbsp. cornstarch
    4 c. no-fat chicken broth
    4 c. water
    1/2 tsp. salt
    pepper to taste
Preparation
    Combine chopped vegetables (include the peeled and chopped broccoli stems), broth, water and salt in a large pot.
    Bring to a boil. Simmer 20 to 30 minutes until vegetables are tender. Process the soup in blender (in batches) until pureed.
    Return to heat. Add skim milk mixed with cornstarch. Cook 5 to 10 minutes to thicken. Add salt and pepper to taste.
