Rice And Peas - cooking recipe

Ingredients
    1 c. dried red kidney beans or pigeon peas
    2 c. Uncle Ben's brown rice
    coconut milk (optional)
    4 cloves garlic
    1 medium onion
    8 Tbsp. olive oil
    1 oz. margarine (soy bean)
    1/2 tsp. cayenne pepper
    1 tsp. salt
    1 tsp. thyme (optional)
    2 stalks scallion (optional)
Preparation
    Thoroughly cook beans plus 4 tablespoons olive oil, 1/2 ounce margarine, garlic, onion, cayenne pepper, salt, thyme and scallion in 6 cups water.
    This will take approximately 2 hours to cook. If water gets low, add a little more.
