Baked Macaroni And Cheese With Sausage - cooking recipe

Ingredients
    1 lb. macaroni (elbow, ziti, penne)
    1 lb. bulk sausage (breakfast or Italian variety)
    1 lb. New York extra sharp cheese, grated
    1/4 c. imported Romano cheese
    6 Tbsp. butter
    6 Tbsp. flour
    2 c. milk
    salt and pepper to taste
    2 to 3 Tbsp. imported Romano cheese
Preparation
    Cook pasta according to package directions; drain and set aside.
    Break up the sausage into a frying pan and brown to cook out the fats, being sure to break up the pieces as they cook; drain.
    Prepare a medium white sauce by melting the butter in a saucepan.
    Add the flour to the butter, blending into a pasty substance.
    Add about 1/2 cup of the milk and blend well; add the remaining milk and cook over medium heat, stirring constantly, until thickened.
    Season with salt and pepper.
    Take off heat source and add the cheeses to the sauce and stir until melted.
