Zucchini Quiche - cooking recipe

Ingredients
    2 c. chopped unpeeled zucchini
    1 small onion, chopped
    1 1/2 Tbsp. butter
    1 Tbsp. flour
    3 eggs, lightly beaten
    1 c. milk or half and half
    1 1/2 c. shredded Swiss cheese
    1/2 tsp. oregano
    pinch of basil
    salt and pepper to taste
    1 (9-inch) unbaked pie shell of choice
Preparation
    Preheat oven to 400\u00b0.
    Sprinkle salt on zucchini and let stand for 30 minutes.
    Rinse, drain and set aside.
    Saute onion and butter.
    Add zucchini and flour.
    Cook 1 minute.
    Beat eggs and milk.
    Add cheese, seasonings and zucchini mixture.
    Pour in shell. Place in oven and reduce heat to 350\u00b0.
    Bake 1 hour.
    Let stand 15 minutes.
    Serve with tossed salad.
