Crawfish Etouffee - cooking recipe
Ingredients

1 lb. crawfish tails and fat
1 1/2 sticks margarine
2 Tbsp. flour
1 medium onion, chopped
2 to 3 pods garlic
1 Tbsp. bell pepper
4 to 6 green onions, chopped
parsley to taste
salt and pepper to taste
cayenne pepper to taste
2 c. water
Preparation

Melt margarine.
Add flour; stir until blended.
Add onion, bell pepper and garlic and cook until tender.
Add crawfish tails, fat and water.
Cook 10 minutes, then cover.
Cook another 15 minutes, stirring occasionally.
Add salt, pepper, green onions and parsley.
Cook on simmer until thickness desired.
