Ingredients

1 1/2 c. lentils
2 medium onions
1 clove minced garlic or 1/8 tsp. garlic powder
1/2 to 1 lb. lean ground beef
2 beef bouillon cubes
1/4 to 1/2 c. brown rice
1 tsp. sugar
1/2 tsp. cumin powder (may omit)
1/2 tsp. pepper
1 Tbsp. cider vinegar
1 tsp. salt or to taste
Preparation

Saute onions, garlic (or powder) and ground beef; add 1 quart vegetable stock or water bouillon, lentils, rice, cumin, pepper and sugar.
Cover and simmer 1 hour until rice and lentils are tender and liquid is absorbed.
Add water if necessary.
Stir in vinegar and salt.
Serve with fried eggplant and yogurt or tossed salad and bread.
