Chicken Breast With Leeks - cooking recipe

Ingredients
    2 Tbsp. butter
    2 leeks
    2 whole chicken breasts, skinned
    salt and pepper to taste
    2 Tbsp. white wine
    1 Tbsp. fresh tarragon or 1/2 tsp. dried tarragon
Preparation
    Melt the butter in a microwave-safe dish by cooking on High for 45 seconds.
    Wash the leeks well and slice the white parts very thinly, discarding the tough green parts.
    Add the sliced leeks to the dish.
    Put the chicken breasts on top.
    Pour the wine around the chicken.
    Place the tarragon leaves on the chicken.
    Sprinkle on a little salt and pepper.
    Microwave on High for 12 minutes, turning the dish at least once.
    (If you bone the chicken, it will cook in less time.)
    And, if you like, you can add a variety of other vegetables for color and taste, such as broccoli and cauliflowerets and carrots.
    The sauce with the leeks is wonderful over a little freshly cooked rice.
