Zucchini Casserole - cooking recipe
Ingredients

4 medium zucchini, diced
1/4 c. carrots, shredded
1/2 c. onions, chopped
6 Tbsp. margarine
2 1/4 c. herb stuffing mix
1 can cream of chicken soup
1 c. sour cream
Preparation

Cook zucchini in small amount of salted water; drain.
Cook carrots and onions until tender.
Stir in 1 1/2 cups stuffing mix, soup and sour cream.
Gently fold in zucchini and 3 tablespoons margarine.
Pour into a greased casserole.
