Skillet Cheese Corn Bread - cooking recipe

3 oz. corn meal
1 tsp. double-acting baking powder
1/4 tsp. salt
1 Tbsp. plus 1 tsp. reduced-calorie margarine
1/2 c. plain low-fat yogurt
2 eggs, slightly beaten
2 oz. grated Cheddar cheese
2 tsp. vegetable oil
Preparation

Preheat oven to 400\u00b0.
In medium bowl combine corn meal, baking powder and salt.
Add the margarine, yogurt, eggs and cheese.
Stir until blended.
Heat oil in a large cast-iron skillet over medium heat.
Pour the hot oil into corn meal mixture.
Stir until combined.
Pour mixture into skillet.
Bake 20 minutes until lightly browned.
Makes 4 servings.
