Baked Potatoes With Cheese - cooking recipe

Ingredients
    8 to 10 medium-size potatoes
    1/2 c. bacon fat
    kosher salt
    3 Tbsp. grated Provolone cheese
    3 Tbsp. low-fat yogurt
    1/2 tsp. Parmesan cheese
    1 egg yolk
    1/2 tsp. fresh chives
    1/4 c. butter
    salt, pepper and nutmeg
Preparation
    Rub potatoes with bacon fat and season with salt.
    Bake 1 hour and 10 minutes at 375\u00b0, turning occasionally.
    Cut off tops of potatoes while hot and scoop out all of potatoes from inside. Using a press-type sieve, sieve the cooked potato into bowl.
    (You need 2 cups potato puree.)
