Spinach Lasagna - cooking recipe
Ingredients

1 (10 oz.) pkg. fresh spinach, stems removed
2 Tbsp. vegetable oil
1 medium onion, chopped
3 cloves garlic, minced
2 tsp. oregano leaves
1/2 tsp. basil
2 (28 oz.) cans tomatoes, drained
1 (28 oz.) can tomatoes (undrained)
1 lb. lasagna noodles
1 1/4 lb. Mozzarella cheese, sliced thin
30 oz. Ricotta cheese
fresh grated Parmesan cheese
Preparation

Rinse spinach, leaving leaves damp. Steam spinach for 2 minutes; set aside. In a large pan, saut onion, garlic, oregano and basil in oil until onion is soft. Add tomatoes. Cover and cook for 20 to 30 minutes. Cook lasagna noodles per package directions; drain.
