Roasted Vegetable Pasta - cooking recipe

Ingredients
    2 lb. leeks or green onions, cut in 3 to 4-inch pieces
    2 Tbsp. thyme, dried or fresh
    1 Tbsp. salt (coarse)
    6 ripe plum tomatoes, quartered
    1/2 c. pitted black olives
    1/3 c. chopped parsley
    1 lb. fettuccine, cooked al dente
    1/4 c. olive oil
    1/4 c. defatted chicken broth
    black pepper to taste
    2 yellow squash, sliced into 1/4-inch thick rounds
Preparation
    Preheat oven to 400\u00b0.
    Place leeks in a shallow roasting pan and drizzle with olive oil and chicken broth.
    Sprinkle with thyme, salt and pepper.
    Cover with foil and bake for 30 minutes.
