Fettucini With Garlic And Clam Sauce - cooking recipe
Ingredients

1 1/4 oz. olive oil
2 1/2 oz. finely diced onion
8 cloves minced garlic
8 oz. white wine
4 oz. clam juice
2 c. cream
8 oz. chopped clams
1/2 c. chopped fresh basil
salt and pepper to taste
fettucini
basil
Parmesan cheese
Preparation
-
Saute onion and garlic in olive oil for a couple of minutes on low heat.
Add wine and clam juice.
Reduce by 1/4.
Add cream and simmer until reduced by one-half its volume.
Add clams, salt and pepper.
Combine with fettucini.
Garnish with basil and Parmesan cheese.
Makes 8 servings.
