Glazed Sweet Potatoes - cooking recipe

1 pound sweet potatoes, peeled
cooking spray
1 Tbsp cornstarch
3/4 c orange juice
1 Tbsp brown sugar
2 Tbsp lemon juice
Preparation

Preheat oven to 425 degrees.
Cut sweet potatoes into 1/2 inch thick slices; place in a 1-quart casserole coated with cooking spray.
Combine cornstarch and next 3 ingredients in a bowl; stir well.
Pour over potatoes.
Cover; bake at 425 degrees for 45 minutes or until potatoes are tender.
Yields:
5 servings, (1/2 cup), 2 points.
