Maple Veal Medallions - cooking recipe

Ingredients
    1 can chicken broth
    1 to 1 1/2 lb. stew veal
    1 small red onion, finely diced
    2 Tbsp. maple syrup
    2 Tbsp. balsamic vinegar (red wine vinegar can be substituted but balsamic has a better flavor)
    2 tsp. Dijon mustard
Preparation
    Place first 3 ingredients in a frying pan and simmer until the veal is tender.
    Add remaining ingredients.
    Simmer another 5 minutes.
    Serve over noodles or rice.
