Microwave Santa Fe Scrambled Eggs - cooking recipe
Ingredients

4 large eggs
1/4 tsp. dried parsley flakes
1/4 tsp. dried oregano leaves
1/4 tsp. salt
1/8 tsp. black pepper
1/4 c. chopped green pepper
2 green onions, sliced
1 small tomato, chopped
1/2 c. shredded Monterey Jack cheese
Preparation

Beat the eggs and spices together in a medium bowl. Stir in green pepper, onions and tomato.
Microwave mixture on High for 3 1/2 to 5 minutes or until the eggs are soft-set, stirring 2 to 3 times during cooking. Sprinkle eggs with Monterey Jack cheese. Cover and let eggs stand for 1 to 2 minutes or until the cheese melts. Makes 4 servings.
