Romano Potatoes - cooking recipe

2 lb. red potatoes (unpeeled)
1 stick (1/2 c.) unsalted butter
2 tsp. minced garlic
4 Tbsp. grated Romano cheese, divided
1/4 c. each: whole milk, shredded Cheddar and shredded Monterey Jack
2 Tbsp. chopped green onion
2 tsp. salt
1 tsp. cracked black pepper
1/2 tsp. ground white pepper
1 tsp. paprika
Preparation

Boil potatoes a day ahead. Cover and refrigerate overnight.
