Pepper Prune Stir-Fry - cooking recipe

Ingredients
    8 pitted prunes, quartered
    2 tsp. sherry or soy sauce
    2 c. snow peas
    1 c. bell pepper strips
    1 c. chopped onion
    1 garlic clove, minced
    1 Tbsp. butter or margarine
    1 1/2 tsp. fresh basil, chopped or 3/4 tsp. dried
    salt and pepper to taste
    chopped mint to taste
Preparation
    Soak prunes 1/2 hour in sherry or soy sauce.
    Saute vegetables in butter (or margarine) until tender-crisp.
    Add prunes and basil.
    Season to taste.
    Add mint.
    Serve with rice.
    Serves 4.
