Lentil Pilaf - cooking recipe
Ingredients

2 onions, slice thin
4 carrots, slice thin
1 large green pepper, slice thin
2 Tbsp. butter
10 oz. can chicken broth
2 c. water
1 c. lentils
1/4 tsp. pepper
1/2 c. uncooked rice
28 oz. can whole tomatoes
Preparation

In a saucepan, saute onions, carrots and green pepper in butter.
Add broth and water.
Bring to a boil.
Stir in lentils and pepper.
Cover and simmer 25 minutes.
Add rice and stir well. Cover and simmer an additional 20 minutes until rice is tender. Add canned tomatoes and heat through until liquid is absorbed.
