Spicy Rice And Beans - cooking recipe

Ingredients
    vegetable cooking spray
    1 c. chopped onion
    1 clove chopped garlic
    1 c. seeded cubed large green pepper
    1 (14 1/2 oz.) can stewed tomatoes
    1 c. defatted chicken broth
    1 Tbsp. ground cumin
    1 tsp. chili powder
    3/4 c. long grain rice
    1 (16 oz.) can red kidney beans, drained
Preparation
    Spray a large saucepan with vegetable cooking spray. Add onion.
    Cook over medium heat for 5 minutes, stirring frequently. Stir in garlic and green pepper. Cook 2 minutes longer, stirring frequently.
    Add stewed tomatoes, broth, cumin and chili powder; bring to a boil. Add rice.
    Reduce heat to low.
    Cover and simmer 18 minutes or until rice is almost done. Stir in beans. Cook until heated through.
