Rich Rice - cooking recipe
Ingredients

4 c. cooked rice, divided
2 Tbsp. butter or margarine
1 onion, chopped
8 oz. fresh mushrooms
1 Tbsp. lemon juice
1 1/2 tsp. salt
1/2 tsp. white pepper
1/8 tsp. ground nutmeg
1 c. sour cream
1 c. finely chopped spinach
1 c. grated Swiss cheese

Preparation

Spoon half of the rice in a buttered, shallow 2-quart baking dish.
Melt the butter in a large skillet with onion, mushrooms, lemon juice and seasonings.
Cook over medium heat until onion is soft.
Remove from heat; stir in sour cream.
Spread mixture over rice.
Cover with spinach.
Top with remaining rice.
Sprinkle with cheese.
Dust with paprika.
Bake at 350\u00b0 for 30 to 35 minutes or until heated.
Makes 6 servings.
