Mint-Glazed Carrots And Peas - cooking recipe

Ingredients
    1 lb. carrots, scraped and thinly sliced
    1 to 2 Tbsp. jellied mint sauce
    1 Tbsp. chopped parsley (optional)
    2 Tbsp. margarine
    1/4 c. sugar
    1/8 tsp. pepper
    1 (10 oz.) pkg. frozen green peas, thawed
Preparation
    Cook carrots in boiling water, enough to cover, for 5 minutes. Drain and set aside.
    Combine butter, sugar and mint sauce in medium saucepan. Cook over low heat, stirring constantly, 1 minute or until sugar dissolves. Gently stir in carrots and peas. Cook over low heat. Cook, uncovered, for 6 minutes or until carrots are crisp-tender, stirring occasionally.
    Spoon into a serving bowl. Sprinkle with parsley, if desired.
    Yields approximately 6 servings.
