Porcupine Meatballs - cooking recipe

Ingredients
    1 lb. Healthy Choice 96% fat-free hamburger (total 16 grams fat)
    1/2 tube fat-free saltine crackers
    1 pkg. powdered onion soup mix (fat free)
    2 tsp. Morton's sausage and meat loaf seasoning mix
    2 egg whites
    3/4 c. instant brown rice (uncooked)
    1 (46 oz.) can tomato juice
Preparation
    Mix hamburger, onion soup mix, sausage seasoning, rice and beaten egg whites.
    Crush crackers and add to hamburger mixture. Make into meatballs and place them in a large kettle of boiling tomato juice.
    Cook for 1 hour until meatballs are done.
    Stir to keep from sticking on bottom of pan.
    Serves 6.
