1 (11 oz.) can Mandarin oranges, drained
1/4 c. syrup from oranges
1/2 c. apricot preserves
1 tsp. lemon rind, grated
1 tsp. lemon juice
2 eggs, slightly beaten
1/2 tsp. salt
1/4 c. milk
6 slices bread
butter
confectioners sugar
Preparation

Drain syrup from
Mandarin oranges, reserving 1/4 cup.
In saucepan, combine syrup with apricot preserves, lemon rind and lemon juice.
Heat until bubbly and then add Mandarin orange segments.
