Sauteed Bean Cakes With Tomato Salsa - cooking recipe

Ingredients
    4 1/4 c. bread crumbs
    1/2 c. parsley
    1/2 c. plain yogurt
    1 tsp. Dijon mustard
    1 Tbsp. lemon juice
    2 green onions, chopped
    2 egg whites
    2 (15 to 16 oz.) cans Great Northern beans, drained and mashed
    1 Tbsp. margarine

Preparation
    Mix 3 1/2 cups of the bread crumbs, the parsley, yogurt, mustard, lemon juice, onions, egg whites and beans.
    Shape into 12 (3 1/2-inch) patties.
    Coat patties with remaining bread crumbs. Heat margarine in 12-inch skillet over medium heat.
    Cook patties in margarine 5 to 6 minutes, until golden brown.
    Serve with salsa.
