Southwestern Rice Salad - cooking recipe

Ingredients
    1/3 c. olive oil
    1/2 c. sour cream
    1 Tbsp. lime juice
    1/2 tsp. ground cumin
    1/4 tsp. sugar
    few dashes ground red pepper
    2 1/2 c. cooked long-grain rice, cooled
    2 tsp. finely diced fresh or bottle hot jalapeno peppers
    3/4 c. sliced ripe olives
    1/2 c. corn
    1/2 c. diced red pepper
    1/2 c. diced, seeded tomato
    1/4 c. sliced green onions
    2 Tbsp. finely chopped fresh cilantro
    1 small avocado, pitted, peeled and cubed
    salt and pepper to taste
Preparation
    Combine oil, sour cream, lime juice, salt, cumin, sugar and red pepper.
    Stir or shake well.
    Immediately combine with rice in medium bowl.
    Add olives, corn, bell pepper, tomato, green onions, avocado, cilantro and jalapeno peppers; toss gently to mix. Season with salt and black pepper.
    Serve salad chilled or at room temperature.
    Makes 4 (1 1/4 cup) servings.
